I had a big cobb salad the other night. Chopped up some iceberg lettuce, shredded cheeses, heated up some chicken tenders and cut them up into the salad, some garden fresh tomatoes, hard boiled eggs, bacon bits, southwestern rach flavored crutons, and some ranch dressing.

wash down w/ a gatorade. Good shit afterwards while playing gameboy on the pot. And yes, my original gameboy still works.

So when I went out to KC last September, Monty's wife had made some killer Jalapeño Poppers. Monty posted the recipe and I made some of those a while back, and they turned out good, but to be honest it was sort of a hassle.

Tonight I decided to use a similar recipe with a little twist.

Ingredients:
1 lb of Jimmy Dean hot breakfast sausage
8 slices of bacon
4 medium to large jalapenos
1/2 cup of onion
1/4 butter
5/8 cup of cream cheese

Fry Bacon, set aside.

Roast the Jalapenos on the grill on high heat for about 5-6 minutes on each side (all 4 sides). Put the Jalapenos in a ziploc freezer bag to sweat for 10-15 minutes. Peel the blackened skin off of the Jalapenos after the 10-15 minutes have elapsed. Deseed and slice Jalapeno into 1" square pieces. Set aside.

Chop the onion into desired size and sautee it in the butter. After the onions are sauteed add the 1 lb of sausage and fry until cooked all the way through.

Add the 5/8 cups of cream cheese and mix until its all the same consistency. Crumble in the cooked bacon and add the jalapeno slices and mix.

That's it.

It's really filling, I could barely eat 1/2 cup of it. You can put it on a piece of bread or eat it straight out of the bowl.

This is a good low carb recipe, btw.

Pizza Hut, but I screwed it all up. I ordered one of those stuffed crust specials online. Turns out all those toppings they talk about are in the "stuffed crust"... then you get to choose like 3 toppings for the pizza itself. I missed that... so I got plain cheese.

Anyway, I ended up with the first Pizza Hut pizza where the crust was better than the actual pizza.

You're substituting black beans for beef, essentially. Lower fat, higher fiber, and the beans still have some protein.

My mom does great fried chicken but it's a pain in the ass so it doesn't happen very often. Mine isn't as good as her's but it's passable when I feel like going to the trouble. I don't see anyone on the horizon who will pick up the chicken frying torch when me and mom are gone.

Lately, my daughter has been taking up the family interest in cooking (all my brothers like to cook -- one is a chef) and learned how to make fried chicken and gravy today. So it is likely that style of fried chicken will go on at least another generation in our family. Kind of cool.

Both my sons are good on the grill which makes me happy. I get a couple of calls a week for grilling questions, stories and conversations. But so far neither of them seem inclined toward learning the art of comfort foods. Maybe my little girl will be more receptive.

About 8 slices of salami and 8 slices of pepperoni topped with bacon flavored easy cheese.

Not even kidding.

Yeah, I normally wouldn't eat the easy cheese, but I've never had it before and just sort of ran with it. Fucking gross.

Is it me or does this stuff help the flavor? I had my doubts, and its not as good as chips but it seems better the plain charcoal.

Grilled a few thick-cut porkchops that rocked - used a dry rub that I concocted myself. Added a few homemade pickes and peppers that my fiance's grandma made for the hell of it. Had it with some of them french fried taters. It was great.

For dinner I'm either going to have some Carne Asada or just skip it. I'm pretty full from lunch.
