Heart of the Matter (originally a solo song for Don Henley) and Help Me Through the Night (originally a solo song for Joe Walsh) performed acoustically by the Eagles. The best songs they did on Hell Freezes Over, and the entire album was great.

I also remember Sammy Hagar doing an excellent acoustic solo of Where Eagles Fly during a Van Halen concert I saw years ago. That was awesome.

Cheezy, I know, but I really liked Marty Casey's acoustic version of Mr. Brightside from Rockstar INXS.

I downloaded a really good cover of Elton John's "Daniel" done by Fuel. Good stuff.
