At this resolution, there's no real practical purpose that I can think of except to make people say "cool" for a brief moment.

After posting something about this a couple days ago, why can't nasa ever give us color photo's, and not some 1930's black and white technology, or some false colored pictures?

In true color, Mars pretty much looks like butterscotch. We chose a gray-scale map in order to highlight more surface details.

The EU color pictures were pretty interesting, so it would be nice to have the option. I feel like I'm looking at Google Moon.
