How can I convert itunes "protected" M4P files to MP3 or WAV?

That's what Bob Dole does. As a bonus, it gives you an archived copy of the music.

Another reason to hate the Apple Ipod. At least protected WMA can be played on most any mp3 player outside the Ipod world unlike Itunes downloads.

The option to burn to disk is greyed out in itunes.

For future mp4 conversions, you might consider Easy CD DA Extractor. http://www.poikosoft.com/

Will save you some CD's, and some time.

p.s. there's also a crack out there somewhere

They are downloaded as M4P not MP4, not sure if what the difference is. I found that when I download them and play with itunes player, the option to burn to disk was greyed out but if you create a new playlist and move the songs to it, then the option to burn to CD works and you can burn as audio CD or MP3.
