In order to crack down on filesharing, there is no way to get music from your Ipod back onto Itunes, unless you have a VERY old version of Itunes.

So, there are a couple different options for standalone software that can get the tracks. I have the "PodPlus" program, but I've yet to use it because I get most of my music from my friends' CDs...

Here's a link.

There is an EASY TO USE and FREE program that allows you to do this

It's called SharePod (http://www.sturm.net.nz/website.php?Section=iPod+Programs&Page=SharePod)

I use it instead of iTunes

Also, you can download iPod Rip...it will only give you 10 uses if you don't register, but its a good program.
