The guys are in charge of the meat... and us females are stuck with the sides for Saturday's game. We're gonna make everything tomorrow night... any idea, recipes, favorites?

We usually take a cheese dip. The spicier, the better. Or just some salsa and chips. Sometimes baked beans or something with shrimp.

Rocky Mountain Oysters Recipe

2 pounds calf testicles*
2 cups beer
2 eggs, beaten
1 cups all-purpose flour
cup yellow cornmea1
Salt and ground black pepper to taste
Vegetable oil**
1 tablespoon hot pepper sauce

* Be sure to ask your butcher for calf testicles, not bull testicles. Calf testicles are the size of a walnut and are much more tender than the larger bull testicles.

** Use enough vegetable oil to fill your frying container halfway to the top (to allow for bubbling up and splattering) and to completely cover calf testicles while frying.

With a very sharp knife, split the tough skin-like muscle that surrounds each testicle. Remove the skin (you can remove the skin easily if the testicles are frozen, then peel while thawing). Slice each testicle into approximately - to - inch-thick ovals. Place slices in a large pan or blow with enough beer to cover them; cover and let sit 2 hours.

In a shallow bowl, combine eggs, flour, cornmeal, salt, and pepper. Remove testicles from beer; drain and dredge thoroughly in the flour mixture. In a large, deep pot, heat oil to 375 degrees F. Deep fry 3 minutes or until golden brown (will rise to the surface when done). Drain on paper towels. Serve warm with your favorite hot pepper sauce.

1/4 cup chopped cilantro
half lime
Thai peanut sauce (half cup or enough to coat entirely)
Rooster or equivalent hot sauce to taste

Place all in gallon zip-lock and toss. Serve with tongs or just dump it on a plate. I've served this with ribs, pulled pork, nearly anything.

I've heard you have some awesome recipes. Dad said he saw a chili recipe, I think it was, that you had published somewhere that he tried. He really liked it.

We went to Dons Steakhouse in Lawrence over the weekend. Our waiter kept telling everyone that "Joe Montana liked our steaks so much we still send mail him some"

So the first thing I see on the menu is "Turkey Fries"

I point that out to the wife and tell her its turkey balls...but she doesnt believe me

So I dare her to ask the waiter...

I was right..

I love asian slaw recipes. That looks like a good one. I'm gonna try it.

BlackBean and Corn Salad...


Whisk together the following:

2 Tbs. Sugar
2 Tbs. Canola Oil
3 Tbs. Cider Vinegar
Salt and Pepper to taste

2 Cups Cooked Black beans
2 Cups Fresh Corn (Blanched) or 2 Cups Thawed frozen Corn
1 Medium Chopped red Onion
1 Chopped green Pepper (Medium Hot-Pablano)
Add Cholula Hot Sauce to taste

Let Marinate for at least two hours before serving.
