I never sear the steak.

Anyone know which steak houses use them? Sacriligous?

If you don't sear a steak then what do you do to it?

I'm not sure which side of the fence you are standing on. Do you use gas? Charcoal?

If the steak is good, then sear it, lock the taste in. I would only slow cook or barbecue a cheap piece of beef.

I can never sear it like the pros do.

Yep.

That's why the charcoal vs. gas debate isn't really a debate.

When you GRILL, you should be searing on high heat. You shouldn't be imparting flavor on the meat. Gas or charcoal, doesn't matter.

When you're slow cooking, you should be imparting flavor. Which is why you should use wood.
