I'm cooking my favorite.

Corned beef and Cabbage.

Cooking it mostly because I love it, and in all probability, am addicted to this heavenly meal, but also because my girlfriend cannot think of a time that she has had it. I had to fix that.

Right now there is a wonderful scent wafting through the air.

So, what are you having?

If you are sad and alone, what do you wish you were having?

I've got a sinus infection, and the wife has a migraine. Normally I'd go nuke some soup, but the goddamn microwave is on the fritz and the repair guy doesn't get here until Monday.

So I just polished off a bag of Doritos with some bean dip.

Good think I'm too stopped up to smell anything.... :fart:

My advise, monitor Costco, and when their Vienna Beef [of Chicago hot dog fame] corned beef hits the chill chests, buy one. Then grab some cabbage and red potatoes on sale in early march. Throw it all in a pressure cooker per instruction [either from Vienna or the pressure cooker manufacturer].
Wonderful, and a damn sight from that soggy stewed mess you get in a regular stew pot.

Yeah, it's installed over the stove. When my wife went downstairs first thing this morning, she noticed that the fan was running and wouldn't turn off, and the area behind the control pad was really hot to the touch. I think the fan kicked in as some sort of failsafe measure. I unplugged it and the heat went away, but it's a damn good thing we were home. The fucker might have caught fire if it had went much longer. Luckily it's still under warranty.

Yeah, its a family thing. It was my grandfathers favorite and my fathers, so when they had a birthday we ate that, and then it became mine and my brothers favorite. I guess some family memories tied to it or something, plus I love the flavors.

The ussual, 1 poptart ( the 4 y/o takes the other one), couple cups of coffee followed by a Mt Dew when I get to work.

Being as I'm recently unemployed and all, I decided last night to fire up the smoker and cook a pork butt, an 8 pounder for about 12 hours overnight. Dinner was pulled pork sandwiches with slaw. I gotta say it was the best I've made. The smoke ring was deep into the meat and the bark was flavorful with a great texture. I'll store the rest in freezer bags, a pound each, for future meals.

RJ's pork butt has me drooling as well.

I worked late and got a takeout order of curry chicken from my favorite stir-fry joint. Nothing like having a go-to eatery close to where you work, where you can get delicious food fast that isn't going to kill you.

I looove cabbage. If I were single, I'd have it at least 6 times a month (cook in big batches and eat left overs).

anybody have a simple cornbeef and cabbage recipe? Got my taste buds wandering.

um, I just got a package of corned beef. It's like 4 lbs and it came with a spice bag. So I put the beef ,the spice pack with some extra ground pepper, salt and I added a little rosemary in a pot with some water and brought it to a boil. Then low heat for about 2.5 hrs. After that I will add the carrots and celery (chopped) for about 20 min, then I'll add chopped cabbage for another 15-20 min and slice up the beef and whoolah!

The chicken and pilaf will be homemade. The cranberry sauce will be Ocean Spray. I love the jellied style cranberry sauce with poultry.

Just made my dough and letting it rise before homemade pizzas.

Will do one simple cheese for the kids.

Wife and I will have what I call "The Roman" (because it's inspired by a broccoli technique someone told me was called "Roman Broccoli.")

Crust
Olive Oil
Minced Garlic
Precook
Remove and add:
Kale barely tossed in olive oil
Goat Cheese clumps
Parmesan
Crushed Red Pepper

Bake until kale turns crispy like kale chips.

Remove shave more parmesan and squeeze with lemon.

The Big EZ is the only cajun place down here that I know of, and it is outstanding. I will have to get a whole lot better to outcook those folks.

That's it I think. In a strip mall with about four stores total. I was impressed, the missus liked it when we ate there ok, but we had the mother in law bring some home once and it wasn't as good that way lol

Friday before Memorial weekend. What you got?

We went out to a restaurant tonight, and we shared a bunch of appetizers and entrees. I did make shepherd's pie last night (lamb, not beef), and I'm making jambalaya (with sausage/chicken/shrimp) tomorrow night.

Sunday's touch and go with the weather around here, so ideas for an indoor meal for about 8 would be appreciated (if the weather's good, there'll be about 20 people, but that'll be burgers and the like). I'm thinking about braising some short ribs or making a chicken adobo, but other ideas would be welcome.

Corned Beef and Cabbage is some of the nastiest stuff there is.
I had grilled chicken breasts that were marinated in an Italian Mustard over night. Then stuffed with pineapple. Had cubed potatoes with red and yellow peppers all cooked in butter on the grill as well.

How do you cook your scallops? Just fry them up with olive oil, butter and garlic? I'm trying to find a nice sauce, but have trouble.

We had grilled chicken with Famous Dave's Apricot-Bourbon sauce, corn on the cob, baked potato with butter, mixed salad, Clausen Kosher Pickle half, and Root Beer.

Later, we have Klondike Bars for dessert.

The wife seasoned the scallops and then seared them with butter and olive oil. The tilapia, shrimp and scallops were then simmered with salsa and capers. It's our favorite healthy dish right now.

I love scallops but they are so damn expensive. I might need to pick some up because that sounds fantastic.

I've got a sinus infection, and the wife has a migraine. Normally I'd go nuke some soup, but the goddamn microwave is on the fritz and the repair guy doesn't get here until Monday.

So I just polished off a bag of Doritos with some bean dip.

Good think I'm too stopped up to smell anything.... :fart:

These days microwaves are getting cheap enough to just toss (or shoot in your case) when they go on the fritz, when you consider the repair charge.

I did go with the braised short ribs and root vegetables, made two ways, both served over rice for those who wanted it. Both seem to have gone over well. In the "different tastes" department, most people preferred the one that I thought was the weaker of the two.

Honey Teriyaki Marinated Chicken Breasts. Potatoes with red, yellow, orange bell peppers along with sliced onions. All cooked on the grill. Was delicious.

Papa Murphys Gourmet Chicken Garlic pizza. Awesome and really garlicky.

If you get the gourmet veggie and add chicken it's actually not as bad as it sounds at all.

Oh yeah. I had an omelet fried in olive oil. Filled with bell pepper, mozzarella and textured soy protein that I had on hand. Sprinkled Season All, onion powder and garlic powder on it.
