On a good neopolitan pizza, the crust is absolutely the best part. Similarly, if the cooks are doing it right, the tortilla is the best part of a Mexican cuisine meal.

Making pizza dough is pretty easy. I do it with my 6 y/o daughter. She does most of the work. It's quite good and something fun to do together. Yeah, it'd be better with a commercial oven but the use of a pizza stone compensates some.

Our homemade isn't as good as my favorite local pizza shop, but it beats the hell out of Dominos or any of the other chains that I've tried.

I agree. The cheapo Ched Boyardee stuff is extremely underrated as far as taste is concerned.

Certain crusts are good, others, not so much.

Papa Johns, Domino's and Pizza Hut = Decent.

Godfathers and Little Cesar's are like cardboard.

Homemade Pizza is awesome if you have the time and energy. Chef Boyardee's crust is good if you add some oregano and basil to it.

I would go so far as to say a good crust will "enhance" a good pizza, maybe even make it better... but if it's the best part of your pizza you need better toppings imo.

Maybe not the best part of a meal, but often the difference between restaurants. With no shortage of Mexican restaurants in my area, the ones we go back to are the ones with good, homemade tortillas.

Oh I agree with that. I lived in Houston for three years and ate quite a bit of Mexican food at a variety of places. You can usually use their tortillas and the salsa they give you as a guage. I just would never eat the meal and say, "That tortilla was the best part."

Pizza is like a sandwich. A good crust or bread can make an otherwise mediocre pizza or sandwich really good. And a bad crust can make an otherwise amazing pizza mediocre.

Crusts and breads are underrated.

The pizza is a marriage of the Holy Trinity: crust, sauce, and cheese. All three must be good. Sometimes, if two are excellent, it can save the pizza if the third sucks ass. If two out of three suck, it's a death knell. IMO, the most important element of the Holy Trinity is the cheese: good quality cheese is necessary. Nice stringiness, good flavor and saltiness, and definitely not cheap shit like the stuff they used to use on Pizza Hut pizzas years ago. The crust can be thick or thin, but burnt is a no-no and it has to have a minimum stiffness because nothing's worse than a floppy pizza you can't pick up without everything ending up in your lap: ideally, when the pizza triangle is raised, the slice can be flaccid but the point should not look sadly at the floor as if it needs Viagra, letting your toppings slide off. Sauce can be chunky or smooth but IMO should NOT be too sweet: sugar is a cheap additive, and belongs in shit like Ragu and Prego, not on a pizza. A good dough might have cornmeal sprinkled on (I think it helps prevent burning). Good high-quality restaurant crusts, to me, are places like Pizzeria Uno and Bertucci's. I won't bother with chains like Domino's or Papa John's because here in the northeast good corner-store pizza is readily available; if you don't have any, I suggest you quickly import some Italians or Greeks into the area.

The only pizza crust I eat is Racanelli's. NY style, and the crust is like an crusty, nutty, artisan bread. Oh, and Talayna's Chicago style, but that's . . . different, like an olive oil and herb infused bread.

I've often advocated Pizza Hut offering baked sauce, meat and cheese on paraffin paper on their buffet, as my plate ends up a junkyard of crust wedges.

Corn on the cob grilled out rocks. Soak the corn in the husk with water then toss it on the grill. Keep grilling till it softens up a bit. Take it off, husk it, and butter, salt and pepper the fuck out of it.

I make a great homeade pizza.

Crust certainly isn't the best part of the pizza, but its important. You can't have too much or too little. Can't stand thin crust. You have to eat like 10 just to fill up. There used to be a pizza place here called the Green Pepper. When they started it was a great place to go with a good atmosphere. They had this trick where they would take the crust and fold it over. When it started the crust was about 3/4 of an inch. By the time they closed in less than a year they were folding it over about 2/12-3 inches. Crust is important.

Tarantino's here in KC by the cop shop downtown. Anthony Joe's Select Chicago style, better than Giordano's, imo.
