Jerked chicken.

Never tried a Jamaican style marinade before, but since the garden is overflowing with things that could be used in such a recipe, I figured I'd give it a whirl.

One chicken I did "beer can" style, but used orange juice rather than beer. Used a dry jerk rub on this one, consisting of salt, pepper, cinnamon, cayenne, standard chili pepper powder, garlic powder, onion powder, nutmeg, coriander, and allspice.

I split the other chicken and put each half on a cedar plank and used a wet jerk paste. This one I employed garlic, chives, onions, an anaheim pepper, a serrano pepper, five Thai peppers and thyme from the garden, along with brown sugar, white vinegar, molasses, soy sauce, cinnamon, nutmeg, coriander and allspice. I put on sliced oranges halfway through the cooking process to add a little citrus flavor and moisture.

Both turned out excellent, but I preferred the wet to the dry.
