OK, I really don't want to grill in this cold today. Anyone have a decent oven recipe?

Yes, I'm a pussy when it comes to below 10 degree temps unless it is a football game.

1 cup vinegar, 2 cups molasses, 1 tsp liquid smoke, 1 cup anti-freeze.

I figured there would be something a little better than the overly simple way.

BBQ chicken in an oven? Not sure that will work quite like you expect.

How about just searing them in a hot skillet until browned on both sides, then cover in BBQ sauce and liquid smoke, and throw in the oven for 20 minutes. Not sure if that's "BBQ", it won't get that char, but its all I can think of.

Start a chimney of coals, put oven rack on lowest spot in the oven, open the windows....you know the rest.

do you have a griddle?

if not slice that chicken breast into one in. strips, foil a cookie sheet, cook on low heat, add bbq about 5-10 minutes out.

Just dumped a bottle of BBQ sauce on the breasts in a oven pan for an hour. Came out decent. Better than spending an hour cooking it outside.

Probably too late now. But take chicken, dip in beat egg, dip in bread crumbs. Brown it in a pan. Throw it in the oven 350 degrees. Cover with tomato sauce and mozzarella. Cook for 10 minutes. Chicken Parm. Easy.

Just as easy, just brown some chicken, coat with tomato sauce and a little bit of red wine. Season a bit (I usually douse with red peppers) and then just let it simmer (covered in foil) for about 30 minutes.

All of those will take about 5-10 minutes of effort.

I do it about 3 times a year while it is cold out not bad a change of pace, sometimes change it out for salsa too.
