Received a Bradley Smoker for Christmas/birthday.
Getting ready to low temp smoke salmon for wifey.
What are the tips and secrets so that my first time is not painful?

I always cedar plank it on the grill, but that's not really low and slow.

Oil the grill, fish takes like 1/5 the time as beef/pork, and be sure to season/spice/marinade beforehand...

Unless you have days, you don't want to smoke salmon. Grill it.

Sounds complex as hell. Thats why it costs a fortune when you go the northwest fishing and have it smoked

I did some red snapper last night over mulberry chunks. I seasoned the snapper with Cavendars and it turned out pretty good. I smoked the snapper for 2 hours at 275 about 3.5 pounds total.
