They put all their fixings (cilantro, onions, grilled onions/peppers, grilled jalapenos, salsas, pico, limes) at a bar that you visit after you order. Then you decorate them as you see fit. Love it.

The actual taco comes with basically meat, and that's it.

Soft FTW. The floppiness keeps more ingredients from falling out, and absorbs the juices (instead of having the hard taco funnel them all into your frigging hand). Plus the hard shells always end up breaking into sharp points and jabbing my gums. If I want hard tortilla I'll eat nachos.

A well made hard shell is the best. It's light, crunchy and not oily. There are only a handful of places that do this well. If a restaurant serves hard shells like you get out of a box, I'll go soft shell and then not go back.

And speaking of, my wife and I eat tacos, literally, 2-3 times a week. We do a variety of things, but the base is: protein (bean, meat, egg, whatever leftover I made earlier in the week), green (spinach, arugula, mexican slaw), cheese (feta, cabot sharp cheddar, parm, shredded crap), condiment (tabasco chipotle, salsa, yogurt, etc..). We throw an endless variety of these things out in a week. Can't get enough. Fairly healthy (depending on your protein) and really easy.

I hear you. But really, I've been to a lot of little taco shops, especially when I lived in Houston. My office was near the Heights and there was little shops around Washington. Mom and Pop places. Yes. This is the correct answer.

There is no such thing as a "soft shell taco". That's like saying a "do you like your pizza topped with cheese or wrapped in lettuce" or "do you prefer a cheeseburger with a bun or with no bun". If it doesn't have a crunchy shell, it's not a taco. It's some other Mexican food.

Tostada vs. tacos bugs me. As far as I can tell, a tostada is nothing more than a taco where the shell isn't curved. Same ingredients, same taste. The only difference is geometry. If I bend my french fries before I fry them, am I allowed to treat them like a different menu item? Can I now call them Swiss Fries or Andorran Fries?

And it's kind of the same deal with enchiladas and smothered burritos. What's the difference? There is none.

The Mexicans have been perpetrating this culinary fraud for decades, trying to make us think that they have a bunch of dishes when they really pretty much only put out slight permutations of tortillas, beef, salsa, and some garnishes. It's ridiculous and it needs to stop.
