So, a friend of mine and I are cooking diner tonight. He's preparing the chicken and told me I had to decide on the sides. I'm thinking asparagus. I love it, but he hates it. Any ideas for other different yet healthy side dishes?

Mashed potatoes and green beans are pretty standard. Wild Rice with mushrooms is good, I like cheesy corn too. A side salad or caesar salad works too. The secret to great mashed potatoes is to put chicken broth in them instead of butter.

Mashed sweet potatoes with cream corn. Not "healthy" per se, but you can always put salsa on it. Salsa makes everything healthy!

Uh-huh. He lives about 40 minutes from here, but his grandpa is still in the hospital here after having heart surgery last week. He's staying with us so he can be close. He spends most of his time either at work, at the hospital, or playing Mass Effect 3 or on our couch in the basement sleeping.

Go grab a couple of bags of frozen vegetables from the supermarket. Also grab fresh fruit or a fruit salad, or just make one. Steam the veggies and serve up the fruit chilled. Sprinkle some cinnamon on the fruit.

This sounds really good minus the salt (I don't salt anything). I don't even know what's in season. I'm sure I can find some peppers, zucchini, and onions.

You don't have to salt it, but a little sea salt isn't horrible for you. You want to avoid foods that have salt added in processing but putting a small amount on the outside of healthy foods isn't a big deal. I typically go for cauliflower, broccoli, carrots as a base. Add in your favorites after that. Mushrooms are a nice addition but be careful as they aren't as hardy as veggies.

Risotto and spinach are two of my favorites but it doesn't make your pee smell.

Take some Chicken broth, Sesame Oil and Soy sauce Add snow peas, mushrooms and sprouts to a sauce pan with the above sauces, saute for 8 minutes and then serve delicious stir fry veggies. Add white/brown rice on the side for starch.

I'm not a fan of cauliflower, but I do have some baby carrots at home that I could add. I'm really liking what I had listed, plus mushrooms.

It's not exactly frying food, it's sauteeing in stuff that is not really bad for you. Use low sodium soy sauce (green cap) and take away the rice for the starch.

FTR, I pretty much just ripped the idea right out of the Insanity diet. It's a declicious, healthy meal.

I saute regularly so I am not at all opposed to it. I also use foods with "normal" amounts of salt. In fact, I'll probably do Shake and Bake at some point this week. And yeah, you could use low sodium soy and ditch the rice. But sauteing is still frying and she specifically said no fried foods.

Before I forget- I tend to go in a different direction than making "health food" dinners. I will make indulgent dinners but use small portions. My kids and I will eat a large breakfast, as large as we can stand. Even on school days when I am at work they will have something at home and something at school for breakfast. Then they have a medium lunch. Finally a light dinner. On some nights dinner is just a small indulgent snack.

I'd take a combination of red, yellow, orange, and green pepper and slice it up with some butternut squash. Chop up some red onion, and saute it lightly in butter with some minced garlic.

Easy here, sauteed brussel sprouts, which are halved and sauteed in olive-oil, bacon+red onion salt n peper.

Mashed yukon gold potatoes, chicken stock based cream gravy w/mushrooms.

stewed cranberries w/ orange zest.

not sure if mentioned, but I make a Rice, Corn and sweet peppers combo that I really enjoy.

1 cup rice
2 cups water

Can of Whole Kernel Corn
1/2 Sweet pepper.
Garlic Salt/Basil for taste.

Ha, brussel sprouts are a signature in my kitchen. It really takes people off guard, but they enjoy them. I use pancetta as well, mix it up to match the season. Costco has fantastic bags of them.

To be a smartass, anything goes with chicken. If want a bomb ass meal, dice up that chicken and make some quesadillas. Or just grill some chicken, mashed potatoes and green beans, don't make asparagus if you know he hates it.

We did actually end up doing stir fry. Zucchini squach, red and green pepper, onion, mushroom, a little soy sauce, and some kung pao seasoning...and of course the chicken. Got some brown rice to go with it. No dessert.
