Elk chops? Bone in?

If it's a cross rib chop, it's essentially the equivalent of a t-bone steak.

Grill it.

The more I think about it, the more I would be inclined to season it like lamb chops, because that's what it is - a bigger, thicker lamb chop.

I like to serve lamb chops rubbed with black pepper and rosemary and then serve with a little bit of sour jam or cranberries.

Feijao tropeiro, frango com limao, alcatra com queijo, picanha, fraldinha, arroz, feijoada, fancy farofa (essential).
