Baked ham (I made a glaze/sauce of brown sugar and coarsely ground mustard with multiple spices), mashed potatoes (scratch and seasoned or course), rice pilaf (with cauliflower, broccoli and mozzarella), fried cabbage (fried in bacon grease from bacon that was crumbled in and added onion/celery sauteed in olive oil) and a long sourdough roll (spread was a combo of butter, sour cream, cream cheese and garlic all folded together at medium heat) and freshly brewed iced tea. Ever year for Easter we have ham, potatoes, a vegetable and bread. I added in the rice just for the hell of it.

Homemade chicken soup. I've been using ginger, peppers processed into a loose paste-like consistency and an extra amount of garlic for it lately, as well as using mostly dark meat, and it tastes great (ok "very good, but not quite great" according to the nearby critic, who's not a big fan of the added bay leaf).

Oh wow the baby riblets turned out freaking awesome an easy A+ but the steaks although good lack what I was really wanting I give B-. The corn on cob pretty good I give a B.
The BBQ sauce I came up with really help things out I give an A-, tad bit sweet but yummy.

Over all I'd give this an A- or B+

I'm grading on a curve my, I had to fix my grill so that I could actually cook on it & cooking late after dark that makes it more fun but harder to see & challenging for light.

I'm saving my third steak for breakfast with eggs in the morning.

Been low carbing it so my menu has been pretty blah. I'm making carnitas today though. Got an 8lb shoulder I'm going to braise in it's own fat cap.

Carnitas are great low carb meal. I am a type 2 diabetic so I do the low carb thing a lot. I was a decent cook before but I think I am better now since you really have to learn how to use spices to enhance a meal since most sauces and condiments are full of carbs.

I'm cooking northern and pinto beans with a ham hock in the crock pot. There has never been a more glorious combination of foods that grab the nose. This will be served over rice for a side/veggie for dinner.

The big problem I have found is finding things to replace the starches. Flax meal, almond meal, and coconut meal are okay at replacing bread type things. I have found that dreamfields pasta doesn't spike my blood sugar that much if I cook it correctly. If you want a safer low carb option, there are shirataki noodles. They smell like fish until you rinse them. Their texture is not like regular noodles or rice but they have lots of fiber to fill you up.

Snacking I mostly do nuts: peanuts, pecans, almonds, and walnuts are the best as far as carb count goes. Cashews, macadamias, and hazelnuts are the worst.

Other than one small bass I got skunked today, but I went too early and knew it, oh well... heres to hoping you have better luck.

Dinner is a mesquite roast pork loin with fresh broccoli and garlic mashed potatoes.

After tonight I will try to limit the carbs, but not entirely because I love their fuel for hardcore workouts... protein and veggie only diets leave one without the energy to go all out, but the diet to go with my workout regimen starts tomorrow, lots of baked/pan cooked with little oil chicken and fish on a small bed of rice.

For the last several weeks, my normal job has been enough of a workout, now its time to kick it up a notch... lots of fresh veggies with carrots, broccoli, peppers, onions ginger, asian brown gravy sauce, garlic, fish sauce etc.

Lots of light beds of white rice and other starches under these meat and veggie stacks... cant wait to feel better, been taking multi-vitamins for two weeks to help me get started and they have made a noticeable difference in my energy level and general alertness.

By the end of july I'll have shed 20 of my 30 extra pounds, 43 is too young to feel 63... its always exciting to get started on a regimen, but this time is for keeps, I'm too old to dick around.

Its not a "diet" its a true lifestyle change.
