I never use them on beef actually. I use them on chicken, pork, and some seafood.

I don't cover the grill while the coals are getting hot. I like as much air as possible to speed up the process when I don't use my chimney starter.

Not while the coals are getting hot. Wait until they are all uniformly ashy and glowing, put the grate on (right side up), and wait a couple minutes. Put the burgers on and cover.

At least, that's how I do it.

I cover but put bottom and top vents fully open to get the air flow.
