Even if OU somehow manages to win the rest of their games, are the pollsters really going to put them over the top 2 SEC teams and whoever finishes the season undefeated (Stanford, Boise, etc?)?

Nobody else plays 2 top 10 teams. Its possible.

I doubt it, too. This isn't a "good" loss. Its losing by double digits at home to an unranked team that struggled to beat Nevada a few weeks ago.
