Made my first batch of jerky EVER using FMB's marinade posted. Dang boys, this stuff is great! I used bottom round as it was the cheapest. More tender than I expected though.

Eye of round is a great cut for jerky. Can't tell you about going with the grain though, I always go against.

Smoked at 180 for about 4.5 hours.

Couple weeks. I'm gonna use some pink salt in the next batch. That should make it last 1-2 months in a vacuum bag.

Doing this one this weekend with eye of round.

2c soy
2c teriyaki
1c brown sugar
2T crushed garlic
1c pineapple juice
1T Chili paste
1T lemongrass paste
3/4t pink salt

What's the deal with soy in everything? My next batch I certainly don't want soy in it. I may try the rest and some sea salt or some other non-soy replacement like umami salt or nanami togarashi seasoning.

Why are you trying to replace soy? Don't like the flavor? On keto or glutennfree?

Vast majority of soy in this country is GMO soy which if you do your research you will discover is horrible for you. Soy is a plant based estrogen also. I don't mind it in smaller doses like sushi. Using a bunch of it in meat, not so much. I might do a little with a small amount of my go to soy sauce. Yamaroku 4 Years Aged Tsuru Bisiho Soy Sauce

Let me unpack the Big_Dummy woo for others who might be curious about this.

There's no difference between GMO soy and regular soy. It's been tested for decades. Here's the results, with pages of references: https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3791249/

Soy contains isoflavones. Which are a type of plant estrogen(phytoestrogen). It is similar in function to human estrogen, but it is not the same. It of course does not work the same as human estrogen. It does have affects on the body, but the fears are so overblown that unless you're intaking gallons of soy per day you have absolutely nothing to worry about. It's just buzzwords that scare Facebook Mommy Groups.

Eat what you want. GMOs are safe.

Almost every vegetable you eat was genetically modified at some point.

The GMO scam lives because of dumbassess like you.

I don't eat a lot of soy because of the estrogen, but soy sauce won't do that to you. Read a ****ing book.
