Oh, it was great! A hit with both of us....even on the scallops I used it; then again mixed some in the crumbs.

I love them fried as well. But wanted somewhat healthier alternative.

They turned out great. I used creole space. They were very spicy and I tried to grill them long enough to give a slightly crunchy texture and mitigate some of chewyness.

Caesar Salad and boneless buffalo chicken, Wingstop chicken tenders [got them at Grandview's bargain factory in bulk, Wingstop logo stamped on the bag] and homebrewed buffalo sauce. I convection cooked them rather than deep fry.
