1) They play a 3-4.
2) Seymour is a 3-4 end, and is too small to be a consistent 3-4 NT. He can play 3 Technique in a 4-3, but not NT in a 3-4 and be a consistent clogger.
3) Seymour was drafted before Wilfork.
4) The Pats spent three first rounders on their D-Line and 1 on their o-line.

What does that tell you?

Now he is but he played DT at Georgia, and if Dorsey was drafted to a 3-4 team he'd be drafted as an end also.

In a 3-4.....if he played in a 4-3 he'd be the under tackle.

In a sense. But really Dorsey wouldn't be drafted by any team running a 3-4, except maybe the one-gap 3-4 schemes used in San Diego and Dallas. He doesn't have the build of a 3-4 DE, he's too short for one thing.
