I tip on service only. If it's poor service, I give 10%, average gets 15% and excellent deserves 20%. If I'm unhappy with the meal or a portion of the meal, I speak with the manager and 90% of the time, the manager removes the item(s) from the bill. I'd NEVER punish the wait staff for a poor menu item. That line of thinking doesn't really make much sense to me. |

If you're going to add a gratuity in it seems to me you'd have to post that somewhere before they ordered the food. On the menu or a sign. I don't think it would be right to just add it arbitrarily, sometimes yes and sometimes no. If you do that I think you're opening yourself up to a discrimination suit.
