I'm not sure it matters too much if you remove the point before you start, I've only done it a few times and that's usually because I don't always need to smoke the full brisket, but here's a video that's pretty-much got you covered in terms of one way to proceed (if you're still looking).

I don't use the apple cider vinegar, I use yellow mustard, but that's just my preference.
