Just keep a temp probe in it and you should be ok, I keep the lid off for most of the cook unless it's really cold.

I've smoked, baked, and deep friend. Prefer deep fried. Will be deep frying and also doing one sous vide this year.

How deep is deep friend? Like balls deep, or is that like deep girlfriend, so deep friend would be like 3/4?

Brine it overnight, add some dry rub the next day and smoke it in my Orion cooker.

Not sure if you're joking, but my father-in-law does this. Not kidding. It's not as bad as it sounds, surprisingly, but it can't compare with just about any other way of preparing it.
