Nope, this is Ribeye (yeah, again NO CHECK-EYE!!!!!), so it's fine on it's own. This was a simple 1hr45min dry brine, and then into the rosemary-seasoned pan. And the veggies were perfect too. I didn't eat the potato, but it was nuked, so I'm sure it was just "OK"...

Ummmmmm, hardly small. That's a 1.75" ribeye that the butcher cut for me. It's a LOT of steak - that's why half (perhaps 1/3rd!!) is in the fridge waiting to be a salad topper! It'd take quite a man to eat the whole thing, and one that might need some time to sleep after...

Not sure where you are in NY, but if you are in the City, or make it into the city, there's a restaurant named Keens at 36th and AotA that's my personal favorite when in NY. Hmmmmmmmmmmmmmm, for some that might be true, but for others, it was perfect. Like i said, a little creative cutting and everybody got what they wanted from one huge steak.

As for grill, no... My grill grate temp can barly get to what a great steak need, much less hold it through the opens needs to for the turns. Next will be the infrared side-searer, I think I can get it done on that puppy...

Rep.. And yes, the rare part was for me!! And make no mistake, it was hardly "cold", it was very warm, it just wasn't done wrong. Little, if any, juice was all over the cutting board when eating, so it was spot-on IMO... It's not always the color, it's how you get to the color that matters. And it was a great piece of meat too (and that's always a crap shoot actually)...
