I sat at the bar during lunch yesterday at my favorite Thai place and chatted up the little old Thai grandma lady... their secret, and the reason I've never been able to duplicate their dishes, is peanut butter. They use creamy PB to lend sweetness and creaminess to many of their sauces.

Oh mos def. Works in chili too.

Sometimes, just for a snack, I take a flatbread and slather on peanut butter, then top with some of my hotter hot sauces.
