Yeah, we're doing this today. Still not sure how we're going to smash it seeing that I don't have 140 lbs of weights in the house and I'm definitely not going to let it sit at room temp for 4 hrs.

The traditional way is with bricks in the fridge.

Thanks, I like the sound of that approach much better. I have plenty of bricks and my mini fridge in the basement is pretty much empty right now.

We made 2 of them.

Pkg of 4 KC strip steaks $18
Hard crusted Italian bread loaves were $3.59 ea.
1 lb of bacon (we only used 1/2 of it) $5.99
1 pkg horseradish cheddar cheese was $2.59
Onion and mushrooms were less than $3
Condiments we already had so ???

I went ahead and weighted them in the basement on the woodstove until they cool a bit, then I'm moving them to the fridge for a few hours.
