Yep I have seen but not bit on them. Pollock kinda scares me off being a bottom feeder.

I've been able to overcome that with pollock and tilapia. Fish either swim in crap, eat crap, or both. More importantly, these fish are more sustainable.

There are some herbs in the pollock burgers that add a nice subtle flavor.

I'd recommend grilling these things outside - I did the pan fry w/ a press and I ended up w/ a pepper jack cheezit on the bottom of the skillet from pressing the cheese out - i must have a sear though - so yeah - I added a piece of sharp cheddar to compensate.

I haven't tried this, but I've tried cooking with ground turkey and didn't care for it, especially for burgers. Too rubbery. Ground pork is better, and I do use that for spaghetti sauce, but if I'm making burgers, I use beef.

It was just the ground turkey they sold at stores. I assumed it was a combo of white and dark meat, but honestly don't remember. Haven't bought it in years.

Same here. It's too bad the texture goes to shit because the flavor compliments so many other things.

my game is on hold momentarily - I hadn't discussed much on CP but I lost my company in January and am in my third week selling internet management tools and secure access. I am one week on the phones and have two demos this week - so that's encouraging. I'm talking to two right now but haven't moved in for the kill just yet. ;)
