My favorite is Texas toast, chipotle mayo, tomato, avacado, bacon, and cheddar and provolone cheeses.

I like mine with mayo, 2 or 3 kinds of cheese (I keep changing 'em) + thin sliced red or white onions on the best bread you can find. Cook 'em slow and low, in butter. They taste better if you drink a few glasses of red wine while you're cooking. But then, everything tastes better if you drink a few glasses of red wine while you're cooking.

I do this a lot! Except instead of red wine, I use good Canadian whiskey.

Oh, and I usually just skip the sandwich part too.

I should have said that I add dill pickles (before cooking) to a standard grilled cheese sandwich. They add a little zip.
