Just fired off my Weber Smokey Mountain newly equipped with a DigiQ2....set at 270 degrees with a chicken on as a test. So far every time I check its plus or minus 2 degrees.....freaking amazing little gizmo. Will put 3 8 pound pork butts on at midnight tonight.

FMB, I was trying to leave a comment about the braised oxtails, but the site said that I appear to be a spam bot and I'd have to follow a link to a different "version" or something like that. I tried twice. Anyhow, my mother made braised oxtails when I was a kid, and you've inspired me to use her recipe to make them this weekend. I'm gonna try serving on a bed of pureed cauliflower with a bit of broccoli mixed in for color. Like the site.

BTW, since you are looking for ideas, you should try something ultra healthy. Even something (cough cough) meatless. I'm actually making stuffed cabbage tonight. Not my moms version with the burger/pork mixture and grated cheese. I'm goin with a wild rice blend and lentils, then topping them with pureed tomatos.
