I usually dumo chips twice for an 8hr smoke, during warmup, and again about 2 hours in. You need to remember that your meat will only take in smoke for the first few hours (depending on mass), so anything beyond that is wasted. For long smokes I got an Amaz-N-Smoker pellet maze, which works great and can provide smoke for up to 8 hrs at a go (for briskets and such)
FWIW, I love having the window to check the meat
