I've made them, certainly worth trying. I also make different variations. I leave off the bacon weave and fill it with things other than bacon. A favorite of mine is an apple, date, blue cheese rolled in sausage and smoked.
I'm taking one to in-laws that is Thanksgiving stuffing rolled in sausage and smoked. |

I used to judge BBQ competitions years ago. The Star did a write-up on this tasty treat one year and suddenly 1/3 or more of the competitors (at some of the contests, not all) were submitting this for their miscellaneous category entry. I think I must have tried 30 at one competition one year.

I made it once, after I slapped it on a plate I wasn't sure how to eat it lol. I just used a forked and ate it. I felt horrible afterwards. Think it'll be better as a burger.

Made it once. It's delicious, but you can literally have one slice and then you're done. It's just too much grease.

I posted in the old thread but will add here as well:
I did maple breakfast sausage. Smoked it for 2.5 hours with oak and cherry wood. After it was done I sliced it, put it on an english muffin, some home made bbq sauce on it, and then a poached egg on top. Probably the best thing ever! |

Smoked it real slow for like 5 hours for a Chiefs tailgate. Put it on the grill to crisp up the outside and it worked great. Sliced it like burgers and put on buns with cheese. A big hit.

Oh, and to exemplify the power of smoked sausage (it's the star despite the bacon), my inlaws are from Southwest Missouri and came up to KC when we bought our house. I fed my FIL some of this and went from "sushi eating pillowbitergot" to "let's go shootin' next time you're down" in about 3 bites. Boom.

Worked Great!
Using waxed paper or tin fold to help roll up the bundles helps in the process. Everyone loved them. |

I did some bacon! It was AWESOME!!! Bacon-moistened rotisserie Turkey, Bacon-wrapped smoked turkey breast, and spiral sliced ham (yawn!!!).. No need for veggies!
Oh, and an aside from Merlot that lasted exactly one bottle! |

Turned out great. It was a big hit. Once I get my colesterol back to normal, I will deffinatly be making this again
