Soup is an underrated dish. Especially in the hands of somebody who knows how to cook good homemade soup. Pair it with some good homemade bread, and I'm happy.
I'll be sure to stop by after you open. Not sure if I'd make the grand opening or not, but I'll be by. If I walk in and yell "Rush sucks! Gimme some soup.", would that be enough to key you in on who I am? Good luck! |

I just had a thought. There's a place in New Orleans where a friend of mine orders live crawfish for parties and stuff. Basically, they just overnight the crawfish to him in special crawfish containers.

I make it so often that I'm not sure how I do it but it's something like this. I use canned tomatoes cause it's easier and good maters are hard to find in New Mexico. This serves 6 or so. 2 14 oz cans diced tomatoes, drained 1 cucumber peeled, seeded and chopped 1 medium red onion, diced 1 green bell pepper, diced 2 ribs celery, diced 1 clove garlic, minced Handful cilantro, chopped, or parsley or basil 1/4 cup olive oil 1/4 cup red or white wine vinegar Splash of balsamic Splash of worcestershire Juice of about a half lemon Little bit of sugar or honey A few shots of tabasco Tomato juice or V-8, maybe 3-4 cups Salt & Pepper Some chopped green chili if you want it hot......or not if you don't I like to blend the whole batch and then chill and garnish with chopped vegetables. An easier way is to only blend about half, faster and leaves some crunch. Not to tell a soup professional his bidness, of course, but that's an easy recipe that everyone seems to enjoy. Very refreshing. |

Where abouts on Truman road are you located? What are your hours? We'll definetly come by, not sure when or if we'll make the grand opening but will make it sometime. I love a good bean soup and my wife has been looking for someplace to get good pies to go ever since Tippens on Noland closed up. Good luck!

I love me some good soup. That lobster bisque is one of my favs too. Where on Truman road are you? I am not real familiar with that road. Are you gonna buy as much of the veggies local that you can? People like that.

I think this is it.. My suggestion would be to have 2 or 3 staples favorites that are always on the menu. For example, a chili, vegetable, and onion soup all the time. IMHO it's hard to beat French Onion done right. The stronger the cheese on top, the better. Good luck dude! Nothing like owning your own joint! DT |

Place in Manhattan while I was going to school was the best. The Say Cheese Deli. Was a great idea, but wrong on the execution because of the location(a back alley) and being a college town. Great Rueben's and other specialty soups and sandwiches. He also sold bulk specialty cheeses and meats. Went out of business my senior year.

I've always thought that a soup joint in the wintertime should offer tomato soup and grilled cheese. Not a fancy grilled cheese on unusual breads with fancy pants cheese, just a plain old grilled cheese on white bread. Same with the soup, just plain and simple. Most places try to get too clever with that sort of food.
Hey, you know that Lambert's place, "Home of the Throwed Rolls"? Maybe you could throw soup at the customers! Nah, probably a bad idea. Throw the sandwiches instead. |
