At some point, you've gotta drop the old, "No soup for you!" on someone.

The pie alone should help you turn a profit....

Fish 06-30-2008 10:56 PM

Soup is an underrated dish. Especially in the hands of somebody who knows how to cook good homemade soup. Pair it with some good homemade bread, and I'm happy.

I'll be sure to stop by after you open. Not sure if I'd make the grand opening or not, but I'll be by.

If I walk in and yell "Rush sucks! Gimme some soup.", would that be enough to key you in on who I am?

Good luck!

I just had a thought. There's a place in New Orleans where a friend of mine orders live crawfish for parties and stuff. Basically, they just overnight the crawfish to him in special crawfish containers.

I think you could do the same thing with soup, bread, and pie, Mr. Halfcan. If so, I would like to see the menu. What are you charging for a pie?

Drink the broth first, Mr. Skip Towne, then slam the rest of the soup between two hunks of bread and voila!!! Sandwich!!!

Hmmm. Perhaps Mr. Halfcan has lettuce soup. It's possible. The beautiful and witty Mrs. FAX makes an excellent vegetable soup that has cabbage in it which is sort of like lettuce. She also makes a mean gazpacho that is almost like liquid salad. I have confidence in Mr. Halfcan's ability to serve up something that Mrs. Sully would enjoy.

Nope it goes bad to fast and is very expensive-plus everyone has them.

Just soup-over rice if you want.

Most of the meals will be in the 240 calorie range for a large serving and just 5 grams of fat.

A big Mac has like 20,000 calories and 6500 grams of fat-lol

But you will be able to have some pie without feeling you are blowing your diet. Pie and all-probably under 800 to 900 calories.

Try it on a hot summer day sitting out on a patio and you'll understand. The stuff is delicious. Almost like a very tasty and thicker V8.

Next time I'm in KC I'll make an attempt to come visit the soup wagon. Though I'm more excited for the pie. I was actually wondering about Rhubarb myself. That and blackberry. Mmm blackberry pie.

On a hot humid day in FL out at the beach I'll still order a hot cup of clam or conch chowder or crab soup from the open-air restaurant. :)

The beer will refresh.

My other summer favorite is Maryland Crab Soup. Gots to have steamed blue crab claws to make it properly, though. Damn, I do mis that. The canned crap from Asia just doesn't work.

The cool thing about a soup restaurant is that you can change your menu daily.

I make it so often that I'm not sure how I do it but it's something like this. I use canned tomatoes cause it's easier and good maters are hard to find in New Mexico. This serves 6 or so.

2 14 oz cans diced tomatoes, drained
1 cucumber peeled, seeded and chopped
1 medium red onion, diced
1 green bell pepper, diced
2 ribs celery, diced
1 clove garlic, minced
Handful cilantro, chopped, or parsley or basil
1/4 cup olive oil
1/4 cup red or white wine vinegar
Splash of balsamic
Splash of worcestershire
Juice of about a half lemon
Little bit of sugar or honey
A few shots of tabasco
Tomato juice or V-8, maybe 3-4 cups
Salt & Pepper
Some chopped green chili if you want it hot......or not if you don't

I like to blend the whole batch and then chill and garnish with chopped vegetables. An easier way is to only blend about half, faster and leaves some crunch.

Not to tell a soup professional his bidness, of course, but that's an easy recipe that everyone seems to enjoy. Very refreshing.

Congrats, Halfcan and I wish you the best of luck in your new venture. I'll be sure to send my KC family over your way.

Where abouts on Truman road are you located? What are your hours? We'll definetly come by, not sure when or if we'll make the grand opening but will make it sometime. I love a good bean soup and my wife has been looking for someplace to get good pies to go ever since Tippens on Noland closed up. Good luck!

How will we know which soup nazi behind the counter is you?

BigOlChiefsfan 07-02-2008 08:27 AM

Best wishes, big success!

Got a street address that we could plug into Yahoo maps or anything? Afraid 'the old Trolley Diner' means as much to me as 'Turn left at that place where I buy my shoes' means to you (and I actually got those shoe store directions once from a lady in Louisiana).

tooge 07-02-2008 11:15 AM

I love me some good soup. That lobster bisque is one of my favs too. Where on Truman road are you? I am not real familiar with that road. Are you gonna buy as much of the veggies local that you can? People like that.

I saw a place on the food network that only serves split pea soup. All you can eat. You should see how damn packed that place was, ALL THE TIME!

I think this is it..

My suggestion would be to have 2 or 3 staples favorites that are always on the menu. For example, a chili, vegetable, and onion soup all the time.

IMHO it's hard to beat French Onion done right. The stronger the cheese on top, the better.

Good luck dude! Nothing like owning your own joint!

Place in Manhattan while I was going to school was the best. The Say Cheese Deli. Was a great idea, but wrong on the execution because of the location(a back alley) and being a college town. Great Rueben's and other specialty soups and sandwiches. He also sold bulk specialty cheeses and meats. Went out of business my senior year.

Do you have any vegetarian food?

RJ 07-18-2008 07:35 PM

I've always thought that a soup joint in the wintertime should offer tomato soup and grilled cheese. Not a fancy grilled cheese on unusual breads with fancy pants cheese, just a plain old grilled cheese on white bread. Same with the soup, just plain and simple. Most places try to get too clever with that sort of food.

Hey, you know that Lambert's place, "Home of the Throwed Rolls"? Maybe you could throw soup at the customers!

Nah, probably a bad idea. Throw the sandwiches instead.

Dang, I forgot about that guy.

Throwing poop is out too, he could get a class action suit from zoo monkeys.

Which is ok, cause poop throwing probably wouldn't attract new customers to a restaurant.
