Christmas Eve/Christmas menu

So what's on your menus?

It's just Mrs. FMB! and I this year - no family, just us at home - so we're taking it pretty easy. We're planning to spend a good portion of Christmas Day at the movies, so we're just going to do a meal on Christmas Eve, then do leftovers on Christmas day.

I picked up a HoneyBaked ham, and I'll do stuffing and potatoes (the wife won't let me off the hook for either of those). She'll do some kind of pie.

And after discovering the Duchesse De Bourgogne this afternoon, I'll be heading to the package store tomorrow to see what other Flanders ales they have in stock. And I've got a nice shiraz on standby.

lewdog 12-23-2012 09:39 PM

Totino's pizza and Natty Ice.

NewChief 12-23-2012 09:40 PM

We did shrimp and grits tonight with our family then had a fire in the back yard with s'mores. The rest of the holidays will be spent with grandparents, cousins, and extended family, so this was it for our core group. It was a nice, relaxing evening to serve as an appetizer for the madness to come.

Booze: Evan Williams, Hornsby Cider, and Boulevard Wheats.

Buck 12-23-2012 09:41 PM

Probably some kind of ham. Ham is ****ing delicious.

GloryDayz 12-23-2012 09:41 PM

We traditionally do lasagna Xmas eve and Hawaiian steak Xmas day.

I'd rather just do chicken wings and ribs....

KCFalcon59 12-23-2012 09:42 PM

Prime ****ing Rib.

Bugeater 12-23-2012 09:43 PM

We're doing a standing rib roast.

LiveSteam 12-23-2012 09:44 PM

My aunt & uncle are cooking up a ham & doing BBQ ribs on the grill. My little one made 2 home made apple pies.
Meet tray & iced down shrimp & cocktail sauce as well. Not as good as Thanksgiving but still an awesome dinner.

NewChief 12-23-2012 09:45 PM

As for holiday ham: it ain't complete with out a Petit Jean meats peppered ham.

I actually used Petit Jean smoked bacon for my shrimp and grits tonight, but that was probably overkill.

Rain Man 12-23-2012 09:46 PM

We have dinner reservations Christmas Eve for a nice local restaurant. It serves steak and seafood, and I have plans for the king crab legs. Mmmmmm, king crab.

KurtCobain 12-23-2012 09:47 PM

Quick trip microwavable sandwiches for xmas eve, and for xmas I think I'm being dragged to the ex inlaws for ham.

Anything for rent in your neighborhood?

NewChief 12-23-2012 09:50 PM

Tomorrow night, btw, will involve king crab legs and filets.

When we go to my mom's it's a peppered ham and garlic cheese grits.

Lonewolf Ed 12-23-2012 09:51 PM

I'm making Danish soup, made of a clear beef based broth, small pork meatballs, egg dumplings, and sliced carrots. Homemade rye bread with butter on the side, followed by Carlsberg. I'll have aebleskiver for dessert, sort of like Danish donuts.

In58men 12-23-2012 10:58 PM

Lots of booze.

My grandpa throws down a pork tenderloin and a whole prime rib. Tons of snacks, more then what we can eat.

Lumpy 12-23-2012 10:58 PM

I don't know about Christmas Eve, but Christmas Day we'll have all the same fixings as Thanksgiving, (turkey, mashed potatoes, stuffing, etc.). Nothing special.

Al Czervik 12-23-2012 11:05 PM

Christmas Eve - King Crab Legs and Shrimp
Christmas Day - Honey Baked ham and Pheasant Chowder

Where did you find this? I'm a huge fan of Sour Brown ales since getting hooked on Rodenbach back when I lived in Ghent. Look for anything with "Oude Bruin" on the label and you will be in good shape.

Roast beef.

Fresh ham (not that cured, pre-sliced horseshit), trifecta potatoes au gratin, some ****ing cheesecake I haven't decided upon, some veggie shit...maybe a stuffed mushroom thing, maybe some creamed spinach...

Or maybe I'll go and get a bunch of $1 McRibs. Them ****ers be tasty, yo.

How do you make buffalo chicken mac and cheese? If you don't respond, expect copious amounts of PM's and Facebook harassment until you do. This is very important. :D

Prime rib..... has to be room temp before you put in oven...

Oven at 500....roast 15 minutes
Reduce heat to 325

Should take 13-15 min per pound

Meat therm at 125-130.....remove from oven, foil tent, let stand 20-30 min.

Thats rare/medium rare

My temps are a bit different, but same method

450 for 30 min
300 for 1 hr ish

I pull at 105-110 for rare. We like it very rare though. Use an instant read thermometer for best results.

We usually do meat fest-baked ribs, sausage and meatballs the size of small apples.

But we had it with family over the weekend.

So we are moving to steak and shrimp ON THE GRILL.
I had to get more gas for the grill today.

Tonight-the lowest temp of the season and I will be outside grilling.
Oh well-its Christmas.

Merry Everything.

Cook it med rare to medium, like it's supposed to be.

You can always slice it up and throw it under the broiler for a few minutes for your guests.

You can un-ruin it.

Pork enchiladas tonight

Mushroom risotto tomorrow. Sounds kind of sparse compared to some of the spreads you guys are having, but the flavor is fantastic, intense, and complex and serving anything else with it would just be a distraction.
