What's for dinner? Here's mine...
A black bean and chorizo soup with focaccia to dip. Lots of great ingredients in the soup and a fresh-baked focaccia to slice and dip. The chorizo is soy and really spicy.
What you got? |
Ate the rest of my wife's homeade chicken noddle soup for lunch today and will be making some black been chilli for dinner tonight with some homeade rolls on the side.
|
|
I'm probably taking the family out to Sweet Tomatoes, have to watch the KU game first though.
|
I ate a Burger at East coast wings for lunch, wasn't much to speak of...

Boil 1/2 hour with filet of swai. Add one tablespoon of teriyaki, 1/2 cup beer (of course), and 2 large ovals of lemon (slices out of the middle of the fruit.) Dump in two cans of small shrimps and 12 large shrimp. Boil another 3/4ths an hour. Add one cup crushed pork rinds and one tablespoon of flour. Then let boil down to 1/2 a pot. Pour over some white rice and enjoy... |

It's Mardi Gras weekend! |
I'm experimenting with supposedly "lesser" cuts of meat (hey, why not). Tonight taken a beef bottom round roast and cut it into steaks. I then tenderized it with one of these:
http://lh3.ggpht.com/_L2n3LpFT_ZA/Sb...0809_cfs01.jpg And not I've got them marinading in a soy base marinade, and will grill them in a couple of hours. To go with those steaks I'm going to grill-bake potatoes and sauté an onion... That's it.... |

I cut down 8 oak trees and 7 hickory today. Burned up the tops, cut the useable wood for firewood, hauled 5 frontloader bucket loads to the splitter. Dinner will be Woodfords reserve and chicken thighs I cooked last night with pasta and my wifes homemade pesto. Then ill crawl to the bed and sleep like a baby.
Doing heat old school. |

OK, the family and neighbor said the round road steaks were awesome. They're nice! I'll agree the steaks lacked nothing on flavor, but I want them more tender. I'm making it my mission to get this cut right too.... Next time I'll add more passes with the tenderizer (one wasn't enough) and perhaps eight-10 ours in the marinade. Heck, if I'm feeling like a longer cleanup, I'll break-out the vacuum marinade and there won't be anything left to question about the marinade getting to the middle of the meat!
But a success nonetheless.... |

I made a chard/spinach/cilantro/romaine/arugula salad with a teryaki/ginger marinated sirloin steak, almonds, crunchy chow mein noodles and a sesame seed dressing. Damn it was good

The Roux is the hard part, it 's all gravy after that. Takes me about 1/2 hour to get the dark color I want. |

My dinner? prepare to be jealous... a frozen steak and jalapeno pizza, with a little extra cheese, onions and olive oil. |

Lately, I've turned the heat up a bit and can get a dark brown roux in around 10 minutes. Just have to keep it moving. |

I ****ed up three KC Strips! Yeah, WTF??!!! How hard can it be? I've done it right/perfectly a million times, and these ****ers might as well been turned into a bad pair of NBA sneakers!! I can't believe some poor cow died for me to do that shit to it. This meat was some other cow's baby, and I feel bad! I'd go to confession, but I'd rather not have a priest **** me after what I've done...

Keeping it simple tonight. I've been eating too much "bad" food lately. It's just a chicken and rice dish in the crock pot. Boneless skinless chicken breast with lots of veggies and spices... and rice.
|
I've said it before, and I'll say it again... in dishes that call for chili powder, homemade chili powder can really elevate your meal. So worth the time to make it (which is only about 10 minutes if you keep everything on hand.

Homemade manicotti, both cheese and sausage, roasted broccoli, garlic bread, and pound cake with strawberry's and Amaretto whip cream. Some kind of wine the neighbors are bringing.
