Side dishes
What are you all rocking for side dishes?
We try to keep it clean by eating canned veggies or a salad. I'm looking to change things up a bit, but I should probably keep it pretty healthy. |
What's the main course?
|
I'm a potato guy.

we do a lot of steamed veggies, package rice mixes and noodles, a few canned veggies (like VYS Peas), and potatoes.
|
mac N cheese is my typical go-to.
Or in a pinch just cut up a couple of potatoes, toss with olive oil, rosemary and other spices and bake/broil until they are the color/crispness of your liking. |
Bro. Steam or boil (boil takes out most nutrients though) cauliflower until it's soft. Blend that shit up with some "I can't believe its not butter" and eat. Healthy and delicious mash potatoes. Amazing.
TRY IT!!!!!!! |
Thought this thread was going to be about side pieces. Shout out to the espys performance.
|
Green beans amandine.
|
The Mrs makes brussel sprouts with bacon that are really good. Broccolini is a nice change of pace as well.
|
Hard to go wrong with broccoli, rice and cheese casserole... and even just broccoli with cheese is fine.
|
I could eat raw cauliflower and ranch dressing for every meal.

I like 'em garlicky with 'shrooms or as a salad with tossed diced raw onion and diced fresh tomato. Then toss in olive oil and vinegar. |
Sauteed spinach in garlic and finely diced onions is my first choice.
Garlicky green beans n' butter and aauteed Mushrooms—other regular favorites. I love a variety of veggies as lightly cooked as possible: Chard lightly steamed Baby bok choy is also great sauteed Bok Choy in a stir fry mix Red Pepper cooked or raw Asparagus Butternut squash- baked, add nutmeg Spaghetti squash with garlic, butter and parmesan ( or with tomatoes or in tomato sauce) Eggplant Tomatoes Zucchini Summer Squash- especially in my summer squash casserole |
Spinach also raw tossed in smoothies or salads even in quiche, omelettes and pies.
Just love spinach. |

I add spinach to smoothies all the time. Good stuff. |
How could I have forgot my beloved sweet potato?
So easy to cook, loaded with vitamin A and anti-oxidants. Good tasting nutritional powerhouse. Just pierce and bake in the oven. Walk away for an hour to do something else. The organic ones tastes fine without butter 'cause they're sweeter. Add butter to the regular ones even some cinnamon and nutmeg. Some add brown sugar but that to me is ruining it's healthy qualities. Tho' it is great in a pie. I also forgot the acorn squash. I don't make it often but it is easy to prepare. Slice in half. Top with butter and real maple syrup—bake in oven. Very good and good for ya' too. Kale, I use this in smoothies cause it hides the taste. I can't stand it cooked. Yuck! Though it is another nutritional powerhouse. It can be good raw diced finely in a salad with cabbage with a creamy lemon poppy seed dressing as well. NewChief is the expert on cooking kale. I just don't care for it cooked. |
A great omelette with using spinach is to also use softened goat cheese, lightly sauteed spinach with garlic and onion, chopped up bacon, and roasted tomatoes. Top off with bacon and roasted tomatoes. To die for!
Don't like goat cheese, just substitute another soft white cheese. I like the tang of the goat cheese with this combination. It's a very rich omelette though. |
Favorite Side dish is ribs.

Very cute. |
Oh, and sweet potato also tastes good raw for munching on. Also very good for you.

I am about to experiment with cooking up my little white pumpkins I bought for my thanksgiving vase decorations. I looked it up online to see if they are edible as a vegetable. They eat them in South Africa. In fact white ones and blue ones are more prevalent there. They only grow the orange ones for America to export in the fall. Interesting huh? I think so.

I like instant mash potatoes, topped with McCormick packet gravy. Cook up some Aldi frozen chicken fried steak patties with a can of corn to boot = good eats.

Cauliflower steaks.
http://whatscookingamerica.net/Veget...ks-Roasted.htm I drizzle a little balsamic on them at the finish. |
Grab vegetables. Put on grill with butter and seasoning salt/lemon pepper/garam masala/garlic salt. Get grill marks on them. Serve.
Also, the salad shirazi that I posted on the appetizers thread. That is great in the summer heat. |

I roasted mine to make a roasted cauliflower soup. That was good too. |

Packaged mashed taters? :Lin: Plus they're dead bought that way. How many of the ingredients on that packet gravy could you read? And canned corn? :deevee: |
Haricots Verts (fancy name for French green beans or the skinny ones) are pretty easy and great. Can be as simple as a adding kosher salt and finish with a little butter if you like.
