Offline Folders in Win2K

I setup a Win2K desktop as a file server, and I have set one of the folders on the server "offline" sharing...

My question is, is there a way to keep all of the files and folders from being dumped into a single folder? Windows seems to effectively remove the folder structure and keep all files in a single folder.

That seems pretty silly to me, so I am assuming there is something that I am doing wrong, that is keeping the directory structure from being replicated on my laptop.

Any SysAdmins know anything about this?
