Totally with you on green onion and shallots. And instead of black pepper, I'd say white pepper and grains of paradise. Ever put grains of paradise on a steak in place of pepper? :drool:

But I can't stand cilantro, not sure if maybe I'm one of those that have the cilantro hate gene.

Yes, yes, yes on the white pepper. I love that stuff. Especially in French dishes; in home made salad dressing. Grains of Paradise can even go in apple pie.

Another ingredient is Herbs-de-Provence. Also great in a homemade salad dressing with white pepper.
But has many other uses.

White Balsamic Vinegar

Man I love this stuff for making salad dressings. It's much lighter than that darker balsamic.
