Ok folks.

You've lived in the southwest. You have a spouse of mexican descent. Your blood runs with chili sauce and molé. I'm talkin to all of you.

Not all of us have had your fortunes. Some of us are at your culinary mercy. There are no Christmas tamales at our houses. We don't know the way of the masa.

Teach us how to make a good tamale. Please.

I have a co-worker that sells a dozen tamales for $10. Takes orders once a week. They're awesome! Funny thing is she's from Peru.

The key is in the ingredients... You need high quality lard and real corn husks. If the recipe doesn't have LARD, they aren't real tamales!

Get on Amazon and do a little research on the books available. I had a co-worker that loves Tamales and found a book from a woman in California that had her own restaurant and had lots of Tamale recipes in it and how to, including dessert Tamales.

I never thought that this would happen - but I swear to god I ate tamales for supper out at my mother's house, I eat them maybe once every six or seven years - then, once I got home, I saw this thread. OMG - it's so neat how it all happened like that.

We drive to Ft Worth and buy a years supply. No one in this area knows a tamale.

my favorite thing about tamales is watching a n00b eat them,
the guy who says he loves mexican food
but thinks taco bell is good

and watching them chew that huck is priceless





and yeah I did it my first time
but I at least knew taco bell sucked

Those Alton Brown vids were the turning point. We made tamales for dinner today.

Everything went smoothly, and they were very tasty.

We used the Masa version of the dough instead of the Corn Meal version popular in the Mississippi Delta Hot Tamales.

It's like pizza, I'll never run out of different combinations of fillings to use.

Give it a try if you've been hesitant.
