A black bean and chorizo soup with focaccia to dip. Lots of great ingredients in the soup and a fresh-baked focaccia to slice and dip. The chorizo is soy and really spicy.

I'm experimenting with supposedly "lesser" cuts of meat (hey, why not). Tonight taken a beef bottom round roast and cut it into steaks. I then tenderized it with one of these:

And not I've got them marinading in a soy base marinade, and will grill them in a couple of hours. To go with those steaks I'm going to grill-bake potatoes and sauté an onion...

I cut down 8 oak trees and 7 hickory today. Burned up the tops, cut the useable wood for firewood, hauled 5 frontloader bucket loads to the splitter. Dinner will be Woodfords reserve and chicken thighs I cooked last night with pasta and my wifes homemade pesto. Then ill crawl to the bed and sleep like a baby.

OK, the family and neighbor said the round road steaks were awesome. They're nice! I'll agree the steaks lacked nothing on flavor, but I want them more tender. I'm making it my mission to get this cut right too.... Next time I'll add more passes with the tenderizer (one wasn't enough) and perhaps eight-10 ours in the marinade. Heck, if I'm feeling like a longer cleanup, I'll break-out the vacuum marinade and there won't be anything left to question about the marinade getting to the middle of the meat!

But a success nonetheless....

It used to take me that long.

Lately, I've turned the heat up a bit and can get a dark brown roux in around 10 minutes. Just have to keep it moving.

I've said it before, and I'll say it again... in dishes that call for chili powder, homemade chili powder can really elevate your meal. So worth the time to make it (which is only about 10 minutes if you keep everything on hand.

It'll keep longer (and IMO taste better) if you'll buy the dried chilies and roast, grind as needed. Once ground as in the powders, the flavor starts to dissipate. After about 6 months, there's not much left. Dried chilies will last at least a year, and dried whole spices will last much longer if kept in the freezer.

Honest question no troll, what is it about mole sauce that you find appealing? I find it to be the least flavorful sauce or dish I have ever tried in my entire life. Yes, I've had it multiple times in multiple places including Mexico. Just seems like flavorless crap/filler to me and I've never understood how people can like it.
