Side dishes
What are you all rocking for side dishes?
We try to keep it clean by eating canned veggies or a salad. I'm looking to change things up a bit, but I should probably keep it pretty healthy. |
What's the main course?

mac N cheese is my typical go-to.
Or in a pinch just cut up a couple of potatoes, toss with olive oil, rosemary and other spices and bake/broil until they are the color/crispness of your liking. |
Bro. Steam or boil (boil takes out most nutrients though) cauliflower until it's soft. Blend that shit up with some "I can't believe its not butter" and eat. Healthy and delicious mash potatoes. Amazing.

The Mrs makes brussel sprouts with bacon that are really good. Broccolini is a nice change of pace as well.

Hard to go wrong with broccoli, rice and cheese casserole... and even just broccoli with cheese is fine.

I could eat raw cauliflower and ranch dressing for every meal.

Sauteed spinach in garlic and finely diced onions is my first choice.
Garlicky green beans n' butter and aauteed Mushrooms—other regular favorites. I love a variety of veggies as lightly cooked as possible: Chard lightly steamed Baby bok choy is also great sauteed Bok Choy in a stir fry mix Red Pepper cooked or raw Asparagus Butternut squash- baked, add nutmeg Spaghetti squash with garlic, butter and parmesan ( or with tomatoes or in tomato sauce) Eggplant Tomatoes Zucchini Summer Squash- especially in my summer squash casserole |
