I'm also a cheese hound.
I found out a couple of years back that I'm allergic to whey though so that eliminates a lot of dairy for me and makes my post workout shakes a little trickier.
I was out of town all week for work so I was eating conference/hotel food. The wife asked what I wanted for dinner and my answer was "something with cheese".
So it's taco casserole for me.
1.5 lbs of GRASS FED ground beef
1 can of black beans (**** you paleo)
1 can of pinto beans
1 can of diced tomatoes with chipolte peppers
1 small can of green diced chilis
Pouch of taco seasoning
A metric shit ton of cheese
Pile-guac
