* Add a splash or two of white wine. Cook until evaporated.
* Add a splash or two of fish sauce. Cook until evaporated.
* Toss in peanuts and cook a little longer.
* Brussel sprouts should be softened and flash fried now. Turn off heat. Add chopped cilantro and green onions. Squeeze in juice of half a lime. Squirt in some sriracha. Eat.

Excellent suggestion.
The basis for this is an excellent way to prepare brussel sprouts. Steam/soften them and then pan fry them.
Season them how you desire. A little acidity helps, as you suggested with wine, citrus, soy, whatever. Perhaps a little sugar to help caramelize their outside layers.
