When the knuckleball is thrown properly, it's as tough to hit as any pitch out there. Think about it. These guys are used to reading the speed/break/spin of the ball coming out of the pitcher's hand. Look, you know what's coming every pitch, but you don't have a clue where it's going to end up. You can't just guess based on the spin of the pitch.
It looks like a layup, but it's not easy by any means.
