Welp, this takes no checking for temp. Yes, you have to load more chips, but that's easy. Water lasts 8-10 hours. So if you can deal with 225 degrees (190 in the dead of winter) for the whole process, this puppy is awesome and is something you can afford to toss if you hate it ($93).
