The meat itself is marinating overnight in soy sauce, olive oil, fresh lime juice, two capfuls of vinegar and minced garlic... throw in some fresh cilantro, diced onion and guac with some Spanish rice

The grease you see is bacon grease... The burgers, the sprouts and the shrooms were done in the bacon fat that was made from the start.
