But there's only so much they can give away without running out of ideas. ...how much different stuff can happen to them on a small island before the show gets so ridiculous that the audience cries bullshit and changes the channel?

Do you see how much stuff that is vs. how productive they are now? At the pace they're going right now, they could spend another 3 months (TV time) doing all that. It would be a great change of pace for them to spend two or three episodes on the hatch, finding a way in, exploring, confronting others, etc. Spend another episode or two on the French woman, and another few on the monsters/mapping the island. Of course, while other stuff is happening, too.... spending more time on flashbacks, on Locke, the raft thing, and oh yeah, someone's still pregnant. That's easily two or three months, not including the "other ideas" part.
I still enjoy parts of the show, and I'm glad they didn't just cram it all into a 6 hour miniseries.... but at the same time, they shouldn't be writing with the idea of keeping it going for as long as possible. After all, they are losing money.
