FINALLY! Its warm enough tomorrow to fire up my smoker.
We'll be having a pork fest tomorrow...
I'm a genius, really. Last year I had a tough time keeping the temp constant on my charcoal smoker. So, with a little ingenuity, I have remedied that issue.
I bought some fireproof insulation and an iron bowl for added charcoal. Did a test run last night and the temp stayed constant at 225. I have 2 racks of spare ribs, some country ribs, a rack of baby backs and a pork butt going on at 0800 tomorrow. I'm using mesquite wood chips, an apple cider blend wet rub and my own personal dry rub that has a lot of heat in it.
I have missed being able to do this. The winter has been way to long.
