It mostly tastes like whatever olive you use, Kalamata, etc.
Good counterpoint to an assortment of cheeses, Feta, Brie, etc.
Basically, if you like good olives with your cheese and crackers, tapenade is a way to put the olive on the cracker, rather than holding a handful of them with the oil and all.
