I started with Stormcloak armor up to becoming Thane of Whiterun. I then wore the Whiterun set, imagining myself as a personal emissary of Jarl Balgruuf as I scoured the countryside killing bandits and necromancers.
I'm now doing side quests around Helgen and Falkreath, wearing full Falkreath guard armor. And as I mentioned before, my character doesn't like magic or magic users, so not only I am not enchanting stuff, I am not using anything that I find that is enchanted either. I use an amulet of Stendarr but that's because he considers it divine blessing rather than "magic".
I like your hardcore roleplay style. I might do the same as an Imperial agent/assassin at some point.
